We are in a new week and we are making changes!! Sunday was meal prep day. In order to set yourself and your week up for success, you have to properly plan. I don’t know about you but I don’t exactly LOVE cooking. It can be fun and I definitely like to eat, but the process of cooking everyday just overwhelms me. For my sanity, I try to plan meals that can stretch out over a couple of day. Who doesn’t like leftovers!?
Today’s dinner is Chicken Stir Fry. One of my best friends bought me a wok for Christmas and I finally got a chance to use it! Now let me tell you a little something about using a wok….its just like those cast iron skillets. It takes WORK just to prepare it for use! LOL!! It literally took me longer to clean and season the pan than actually cooking the meal. But I digress…
This meal is a fan favorite in my house and I don’t feel guilty about feeding it to my kids. Aside from the sodium in the soy sauce, this dish is jammed pack with yummy veggies! This will last for at least 2-3 days in my house. I will post the recipe below. Let me know if you try it!
Chicken Stir Fry

Yield: 6 servings
Ingredients:
- 2 cups of White Rice
- 4 cups of water
- 1 bag of Stir Fry Veggies
- 2-3 Skinless, Boneless Chicken Breasts (Cut into small cubes and season to taste)
- 1 tablespoon of Sesame Oil
- Soy Sauce
- Yum Yum Sauce
- Seasoning of your choice
Directions:
Step 1. Bring water to a boil, add rice, reduce heat to medium, cover and let it simmer until the rice is tender and all water has been absorbed. Place rice in the refrigerator and allow to cool down. (I prefer day old rice but leaving it in the fridge for a few hours works too but it isn’t required)
Step 2. Heat the sesame oil in the wok over medium heat and add your diced up chicken breast. Cook and stir chicken until it is no longer pink.
Step 3. Add veggies to the pan and stir allowing the vegetables to become tender.
Step 4. Add the rice into the pan along with the soy sauce to your preference and stir to mix in all of the ingredients.
Serve with fortune cookies and Yum Yum sauce
